Danish cucumber salad “Agurkesalat”


My Fafa ( grandpa) makes this side dish all the time. Its been a staple at the table for as long as I can remember.
It’s so easy to make and so delicious.
You will need a mandelion to slice the cucumbers to almost paper thin.
1 cup of Vinegar ( regular vinegar)
Although you can use Apple cider vinegar but thats not the traditional way. But its still good.
1 cup of Sugar
2 large cucumbers .
Wash the cucumbers.
Don’t peel them.
Slice them on the mandelion to paper thin slices.
Put them in a bowl with one cup of vinegar and 1 cup of sugar.
Mix around till sugar dissolves.
Transfer them into tupperware and stick them in the fridge for a day.
They taste better as the days go.
If you don’t want to use so many cucumbers  and want a small cucumber salad, just do equal parts of sugar and vinegar.
Let sit for a day .
