picked up this lovely cookbook today

I bought this lovely cookbook on Amazon a week ago. Omg I love it.
Tonight I'm going to make some gnocchi . My mouth is watering just thinking of it.

Vegan White Bean Chip dip


Yummy summer salad I just put together today.
16 oz. Of white Beans , drained and rinsed .
Cilantro ( half a cup , rinsed and chopped finely.)
Red onion ( half a cup )
One lemon ( juice only no seeds)
1 Tomato hard not too soft, and no seeds .
Pepper to taste
A dash of garlic powder
Small jar of marinated Artichokes
Drain and dice up.
Mix and ingredients together and squeeze lemon juice into mixture.
Refrigerate for 2 hours and serve.

Coconut milk
Green, yellow and red bell peppers
Thai peanut sauce
And a little Sriracha aka ” rooster sauce “sauce to spice it up..

Eating On The Go

So I’m a makeup artist. I travel quite a bit from one makeup job to the next. I find it hard to get enough time to eat between jobs. I found the most delicious organic vegan raw bars EVER. They don’t taste like cardboard either ;-) They are filling , give me energy and taste Sooooo good.
They are called Raw Revolution.
My fav. Is the cashew bars and coconut bars. Either way you must … must must try them .

“Perhaps you’ve spotted PETA supporters showering on the street, hiding behind a shower curtain that reads: “Clean Your Conscience: Go Vegan! 1 lb. of Meat Equals 6 Months of Showers.”
There have been debates as to exactly how true this claim is, but PETA’s overall point is valid. According to a 2010 report by the United Nations Food and Agriculture Organization, animal agriculture accounts for over half of global freshwater consumption. Livestock operations are incredibly water intensive, not only because of water that animals drink, but because of the amount the animals indirectly consume through the crops raised for their food.
The U.N. report advised a global shift towards a plant-based diet in order to conserve water. The strain on limited freshwater resources will only worsen in coming years with increased world population and the effect from global warming.
Americans eat about a half-pound of meat a day on average, which is about ten billion animals per year. The amount of water estimated to produce one pound of beef varies from 435 gallons to 2,500 gallons.
Global production of meat continues to increase, and by the year 2050, demand for meat worldwide is expected to double. 2050 is also the year that freshwater is estimated to be scarce for 75 percent of the world’s population. This growing appetite for meat is not sustainable. It will be devastating to our world’s water supply. It will also mean more animals raised in intensive and cruel factory farming conditions.
As we face global water shortages, it is time we rethink how we use this precious resource. We all know to take shorter showers and to turn off the faucet while we brush our teeth, but it appears that the biggest way to cut down on water usage isn’t in the bathroom; it’s in the kitchen. If you go vegan or vegetarian, you’ll save water by consuming plants directly.
An omnivore diet requires 4,200 gallons of water a day, a vegetarian diet takes 1,200 gallons and a vegan uses 300 gallons of water a day. I’ll drink to that.”

Almond butter Vs. Peanut Butter


My mom sent me a email telling me some pretty important warnings about peanuts. I like peanut butter and it has been a staple in my home as a young adult for years. Peanut butter is a good source of protein but its filled with hydrogenated oils and lots of sugar. Almond butter contains no added ingredients or preservatives.
Almond butter is a good source of protein also. it’s packed with monounsaturated fats, which are good for the heart, and helps to control blood sugar.

Unfortunately a mold commonly winds up growing on peanut butter. This fungus Aspergillus flavus releases a cancer causing metabolic product (mycotoxin) called aflatoxin B1, which is a officially recognized carcinogen (cancer causing compound). Workers around peanuts even have to wear protection because of the health hazard. It is common knowledge that farmers and animals around peanuts have increased liver cancer.
How much of this fungus and to what degree it converts to the mcycotoxin aflatoxin seems to depend on where the peanuts are grown and how they are stored and for how long. Peanuts have less of this problem if they are farmed in dry climates, as the fungus seems to thrive in humidity. Other foods have this fungus growing on it such as walnuts and grains, but peanut butter and corn seem to be the worst afflicted foods.  The risk of peanut butter giving liver cancer is a bit exaggerated by some. But most bodybuilders consume it everday, often in high amounts, which could be a problem.
Alternatives to peanut butter:
Almond butter is the best food alternative for peanut butter. Flaxseed oil would even be better, but it’s not a substitute in food as a butter. Almond butter actually has higher omega 3′s than peanut butter anyways and isn’t contaminated with this fungus. Almond butter is not as tasty as peanut butter, but at least you know you won’t be posioning your body. If you decide to use peanut butter, see if you can get peanuts grown in dry areas, to help reduce or eliminate fungus contamination.

Vons ( The Vons near my house has a nice selection of vegan food )
Henrys and Sprouts ( afforable Organic Produce and lots of vegan food )
I shop from the bulk bins for spices and staples. The price is less than half and seems to be fresher and taste better too!

Danish cucumber salad “Agurkesalat”


My Fafa ( grandpa) makes this side dish all the time. Its been a staple at the table for as long as I can remember.
It’s so easy to make and so delicious.
You will need a mandelion to slice the cucumbers to almost paper thin.
1 cup of Vinegar ( regular vinegar)
Although you can use Apple cider vinegar but thats not the traditional way. But its still good.
1 cup of Sugar
2 large cucumbers .
Wash the cucumbers.
Don’t peel them.
Slice them on the mandelion to paper thin slices.
Put them in a bowl with one cup of vinegar and 1 cup of sugar.
Mix around till sugar dissolves.
Transfer them into tupperware and stick them in the fridge for a day.
They taste better as the days go.
If you don’t want to use so many cucumbers  and want a small cucumber salad, just do equal parts of sugar and vinegar.
Let sit for a day .
